MIAMI RIB MIAMI RIB

This is cut from the short rib.  Cut across 4 bones.  This is cut thin about 1/4 inch thick.  Marinade at least 24 hours before cooking.

Picanha is the cap of the sirloin, and is an extremely tender cut. This piece of meat usually weighs around 1.5-2.5 lbs and comes from the end of the sirloin.
