This is cut from the bottom of the belly in the loin section.  This cut is tough and needs to be marinated 24 hours before cooking.  Make sure to cut against the grain.

This comes off the shoulder also known as Terres Major.  This cut is easily as tender as a rib steak or striploin.   There is very limited supply of this cut, so call before ordering.

This is cut from the shoulder blade.  We fillet this steak.  Perfect for a fast fry, or even for fajitas and tacos.

HANGER STEAK HANGER STEAK

This is also known as the back steak.  This amazingly tender cut hangs off the liver which means its loaded with flavour.  There is only 1 steak on each animal.

Cut from the chuck rib eye, and put on a skewar.  This is sold frozen in the winter and fresh in the summer.

This comes from inside the loin tucked in under the tenderloin.  Cut against the grain and this is one of the most tender cuts on the animal.

This is cut from the loin.  One side of the cut is tenderloin, the other striploin.  This cut between April and September.  The rest of the year it is cut only upon request.

This is the most tender part of  the animal and cut from the inside of the loin.  This can be cooked as a steak or as a roast like a wellington.
